CHEYENNE, Wyo. — Councilmembers are considering a bar and grill liquor license for a new restaurant opening this week.
John and Kathy Brent appeared before the Cheyenne City Council on Monday night for a public hearing regarding a liquor license application for their new restaurant, Nellie’s. The business is set to open at 11 a.m. Tuesday inside Cheyenne Regional Airport, 4020 Airport Parkway, Kathy Brent said at the meeting.
The owners expressed their intentions for the restaurant and disclosed their personal backgrounds to councilmembers in a letter. They said they have decades of experience in the food and beverage industry. They have operated Rock Ranch Grill and Cafe 307. Kathy has been a barista at Starbucks, and John has most recently served as executive chef at the Metropolitan.
Members of the city’s governing body will review the application at the Finance Committee meeting on Dec. 16. The council will then decide to approve or reject the license at its Dec. 23 meeting. If approved, the license would be active from Dec. 25 to March 31.
Nellie’s will specialize in salads, soups, oven-toasted sandwiches, pasta and flatbreads.
